Inspired by a cooked sardine dish going back generations, the hand-harvested and processed fish are served in a flavorful sauce of tomato, wine, red, pepper, and onion that is thickened with flour for extra body. With that in mind, please note that these are not gluten-free, but if that’s okay, we recommend marrying these warm with caramelized red onion and yellow bell pepper on a pillowy soft bolillo roll.
