Intergalactic is an award-winning all-American beauty - it’s also our signature. It's a soft lactic cow’s milk cheese, coagulated with Iberian cardoon thistle flowers rather than animal rennet, a new American twist on a tradition that dates back to the Roman Empire. Herbaceous and creamy, with a hint of tang and a distinctive olive-like finish, this cheese has a melt-in-your-mouth wrinkly rind, followed by a gooey creamline and a lusciously fluffy center core.
