Straddling the line between light and dark, this bar is accentuated by the addition of Peruvian warm spring salt from Maras in the Sacred Valley. Our endeavor to craft exceptional chocolate begins with the selection of flavorful, ethically-sourced cocoa beans. At our workshop in the Catskill Mountains we roast, hand-sort, crack, winnow, refine, and conche in small batches using both modern and traditional techniques.
